Creamy Tortellini with Bacon and Mushrooms

Whether you want a quick throw-together dinner, or are catering for the masses, this quick and easy creamy Tortellini loaded with lots of bacon and button mushrooms is definitely a crowd pleaser!

  • 1 x family size packet of veal Tortellini
  • 450ml thickened cream
  • 300g shortcut bacon
  • 300g button mushrooms
  • 2 tbsp butter
  • 1 tsp minced garlic
  • 150g Parmesan cheese
  • Salt and pepper to taste
  • Garlic bread, to serve
  1. Cook a packet of family size veal Tortellini according to the packet instructions
  2. Meanwhile, wipe and slice the mushrooms and chop the bacon into small squares
  3. Heat the butter in a small saucepan and sauté the mushrooms and garlic until cooked, then remove from pan
  4. Cook the bacon in the same pan until golden and set aside
  5. Once the Tortellini is cooked, drain and put back into the pot (off heat)
  6. Stir in the cream and cheese until combined and melted
  7. Stir in the bacon and mushrooms, season, and serve with garlic bread

You can quite easily stir in any left-over veggies you might have in the fridge. I have tried broccolini, spinach and even fresh capsicum for a nice crunch.
